A light and refreshing recipe with delicate, harmonious flavors.

INGREDIENTS FOR ONE PERSON

  • 1½ zucchinis
  • 4 rehydrated dried figs
  • 2 tbsp seaweed of your choice or barley grass powder
  • ½ lime or lemon
  • 1 handful of fresh basil leaves
  • A small amount of water

Preparation

Finely grate one whole zucchini into a large bowl. Add the seaweed or barley grass powder and the figs cut into small pieces, then mix well.

Transfer the mixture to the tartare ring and gently press it down to remove any excess juice. You can collect the juice and drink it through a straw. Carefully remove the ring, then drizzle the tartare with half of the lemon or lime juice.

Now prepare the sauce. Place the remaining half zucchini, cut into pieces, in a blender with the basil, the remaining lemon or lime juice and a small amount of water. Blend until smooth.

Spoon the sauce alongside the tartare and enjoy!

Tips

  • Everyone’s tastes are different and may change depending on their needs at the time, so feel free to adjust the quantities. They have intentionally been left fairly flexible.
  • The basil can be replaced with another fresh herb of your choice.
  • Barley grass powder can be replaced with wheatgrass powder.
  • Food always tastes better after a moment of gratitude! 😉
